2) Thermovinification

Hot extraction: to improve the extraction of compounds from the grape skin during red maceration, thermovinification is used. This technique consists of heating the harvest in a few minutes at 70° C, then letting it macerate for 30 to 40 minutes. The grapes are then drained and pressed. The juices will then be cooled and fermented in the liquid phase. Although thermovinification eliminates laccase, the enzyme responsible for oxidation phenomena, it also offers the advantage of favoring the extraction of compounds from the skin such as tannins, anthocyanins, aromas and polysaccharides.

2) Tubular/ coaxial exchangers, corrugated tubes

The tubular exchanger works thanks to an exchange between two fluids, a "primary" responsible for providing heat, and a "secondary", which is impregnated with this calorific energy.  Thus, one of the fluids of the tubular exchanger circulates inside the tubes, while the other circulates in the shell, that is to say around the tubes.  In order to improve the transfer outside the tubes and to create some turbulence in the fluids, baffles are installed inside the shell.

  It resists very strong pressures, and many powers,  accepting large temperature differences.

corrugated tubes are more efficient at heat transfer than smooth tubes and have a number of advantages.  Turbulence makes tubular heat exchangers more efficient by preventing viscous (thick) materials from sticking to the tube wall, where they can act as insulation and prevent efficient heat transfer. It also prevents suspended solids from escaping from the carrier fluid and having a similar effect. The corrugated tubes are designed to create this turbulence.

On the other hand, because a corrugated tube offers a higher heat transfer rate than a smooth tube of the same length, the size of the heat exchanger can be reduced . The optimized thermal efficiency (up to 3 times higher than that of a smooth tube heat exchanger) also means that the transfer time is less important to obtain the same level of heat transfer.

2) LES PALETTES DE FILTRATION
